Leftover fry up cakes......(serves 1)
2 cold roast potatoes
4 cooked sprouts
3 cold roast parsnips
Chop the cold vegetables into rough chunks.Press together with your hands into a small cake shape.
Melt the butter in a pan and carefully place the cake in the pan. Let is cook for 2 or 3 minutes without moving otherwise it might fall apart. Carefully flip over and cook until brown and crispy.
